Cherry Clafoutis

Cherry pie is a great way to make the best of cherry season, but sometimes you just don't have a full day to make a dessert. While the French name "clafoutis" may sound more complicated than pie, it's essentially a large, thick, baked pancake that comes out chewy at the edges and custardy in the middle. Studded with juicy ripe cherries and spiked with a bit of Vanns Almond Extract and Cherry Flavor to enhance the natural flavor, this dessert takes a little over an hour from the moment you mix the ingredients to the time it hits your plate -- and most of that time is spent in the oven!

Preparation

  1. Heat oven to 350°F. Generously grease a 9-inch circular baking dish, cake pan, or cast iron skillet with unsalted butter and sprinkle cherries evenly over the bottom.
  2. Stir together flour, sugar, and salt in a medium mixing bowl. Add milk, eggs, melted butter, almond extract, cherry extract, and vanilla and whisk until a smooth batter forms.
  3. Pour batter over the cherries and rearrange to evenly distribute if needed. Bake in the middle of the oven until puffed, browned, and fully set in the center, about 50 minutes.
  4. Allow to cool slightly, slice into 6 pieces, and serve sprinkled with powdered sugar, topped with whipped cream, or both.
