Baked Sweet Potato Fries with Chipotle Maple Aioli

Good fries are one of those things that seem too difficult to be worth making at home, especially when you can probably find a pretty decent version at your local drive-in. But sometimes it's too late at night, or you don't want to leave the house, or you have some sweet potatoes to use up, or you want your fries to be on the healthier side, and that's where this recipe comes in. Sweet potato batons are tossed with a bit of oil and a savory spice blend and roasted in the oven until tender and soft or crisp and crunchy - it's your choice! While the fries bake, you whip up a smoky, sweet dipping sauce for them. Sooner than you realize, the fries will be out of the oven and onto a plate in front of you, and you'll realize that they're worth making at home after all.

Chili Powder, Chipotle

For the fries:

For the aioli:


  1. Heat oven to 375°F.
  2. Peel sweet potatoes and rinse off any remaining skin or dust. Cut potatoes into ¼-inch thick planks, and then each plank into ¼-inch thick batons. Cutting the planks will be easier if you first slice off a portion of each potato to create a flat surface to stabilize the potato against the cutting board.
  3. Place sweet potato batons in a bowl and toss with olive oil, spices, and 1 tsp. Vanns Sea Salt. Line 2 baking sheets with parchment paper and arrange sweet potatoes on paper, evenly spaced. Bake for 10 minutes in oven, and then flip each fry using tongs. Bake for an additional 10 minutes, until fries are browned and tender.
  4. If you prefer softer fries, remove pans from oven at this point. For crispier fries, lower oven to 200°F and bake for an additional 10-20 minutes, until desired texture is reached. Remove from oven, salt to taste, and serve immediately.
  5. While fries bake, make chipotle aioli, place mayonnaise, spices, and maple syrup in a small bowl and stir until evenly combined. Add more or less of any ingredient to reach desired flavors. Refrigerate until serving. This sauce is best if refrigerated for 15-20 minutes before serving to allow flavors to meld.
