From its humble beginnings in a small town in Thailand to becoming a household name around the world, the journey of Huy Fong Sriracha is a fascinating tale of flavor, innovation, and even, as of late, shortage.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But why is there a shortage? And how does this hot sauce inspire new products, like sriracha-flavored seasonings? Let\u2019s explore the spicy history of Huy Fong Sriracha, its global impact, and why the demand for sriracha products is hotter than ever.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I first tasted Huy Fong Sriracha at <a href=\"https:\/\/goodstuffeatery.com\/\" data-type=\"link\" data-id=\"https:\/\/goodstuffeatery.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Good Stuff Eatery<\/a>, a Capitol Hill restaurant known for gourmet burgers. Spike Mendelsohn, a former <a href=\"https:\/\/en.wikipedia.org\/wiki\/Top_Chef:_Chicago\" data-type=\"link\" data-id=\"https:\/\/en.wikipedia.org\/wiki\/Top_Chef:_Chicago\" target=\"_blank\" rel=\"noreferrer noopener\">Top Chef (2008)<\/a> competitor, owns the restaurant. Good Stuff Eatery features Huy Fung Sriracha (<strong>Fig 1<\/strong>) on each table as a condiment for burgers and handcut fries.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"800\" src=\"https:\/\/vannsspices.com\/journal\/wp-content\/uploads\/2025\/03\/image.png\" alt=\"huy fung sriracha\" class=\"wp-image-681\" srcset=\"https:\/\/vannsspices.com\/journal\/wp-content\/uploads\/2025\/03\/image.png 1200w, https:\/\/vannsspices.com\/journal\/wp-content\/uploads\/2025\/03\/image-300x200.png 300w, https:\/\/vannsspices.com\/journal\/wp-content\/uploads\/2025\/03\/image-1024x683.png 1024w, https:\/\/vannsspices.com\/journal\/wp-content\/uploads\/2025\/03\/image-768x512.png 768w\" sizes=\"auto, (max-width: 1200px) 100vw, 1200px\" \/><figcaption class=\"wp-element-caption\"><strong>Fig 1<\/strong>: Huy Fung Sriracha<\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">The Origins of Huy Fong Sriracha<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Huy Fong Foods Sriracha, the iconic hot sauce known for its distinctive bright red color and green cap, actually has humble beginnings in the small Thai coastal town of Si Racha (hence the name). In the 1930s, a local Thai woman, Thanom Chakkapak, is said to have first concocted the sauce that would eventually become a global sensation. The original Thai recipe combined red chili peppers, garlic, vinegar, sugar, and salt \u2013 a simple but potent mix.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But as we know it today, sriracha owes much of its widespread popularity to David Tran, a Vietnamese immigrant. In 1980, Tran founded <a href=\"https:\/\/www.huyfong.com\/\" data-type=\"link\" data-id=\"https:\/\/www.huyfong.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Huy Fong Foods<\/a> in California and began producing sriracha sauce for the American market. Huy Fung is named after the boat Huey Fong, which brought Tran to the United States in 1979. Tran\u2019s version of sriracha used the same essential ingredients but added more sweetness and garlic, along with the now-famous rooster logo on the bottle.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">His version quickly gained fans across the U.S., particularly in the food service industry, and eventually spread to home kitchens, restaurants, and grocery store shelves worldwide. Today, Huy Fong\u2019s Sriracha is arguably the most popular version, even though many companies now produce versions.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">The Sriracha Shortage<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">In 2017, Huy Fung Foods ended its partnership with California-based<span style=\"box-sizing: border-box; margin: 0px; padding: 0px;\">&nbsp;<a href=\"https:\/\/underwoodranches.com\/\" target=\"_blank\" rel=\"noopener\">Underwood Ranches<\/a>, the longtime supplier of the red jalape\u00f1o peppers that give sriracha its signature flavor. This led to a years-long court battle in which a jury awarded Underwood Ranches $23.3 million for financial losses caused by the breakup. As a result, Underwood Ranches&nbsp;<\/span>produces its version of sriracha sauce and directly competes with Huy Fung Foods.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In June 2022, Huy Fung Foods suspended production of sriracha due to a drought in M\u00e9xico that adversely affected the quality of the jalape\u00f1o peppers. The pepper shortage has been ongoing and led to an additional suspension of production as recently as September 2004.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Huy Fung depends on red (ripe) jalape\u00f1o peppers to give its sauce its signature color, so green (unripe) jalape\u00f1o peppers are unsuitable.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Because jalape\u00f1os must remain on the vine longer to mature and turn red (<strong>Fig 2<\/strong>), environmental stress (extreme temperatures and drought) can mean the peppers must be picked while still green, rendering them unusable for Huy Fung&#8217;s version of sriracha.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"800\" src=\"https:\/\/vannsspices.com\/journal\/wp-content\/uploads\/2025\/03\/image-1.png\" alt=\"\" class=\"wp-image-682\" srcset=\"https:\/\/vannsspices.com\/journal\/wp-content\/uploads\/2025\/03\/image-1.png 1200w, https:\/\/vannsspices.com\/journal\/wp-content\/uploads\/2025\/03\/image-1-300x200.png 300w, https:\/\/vannsspices.com\/journal\/wp-content\/uploads\/2025\/03\/image-1-1024x683.png 1024w, https:\/\/vannsspices.com\/journal\/wp-content\/uploads\/2025\/03\/image-1-768x512.png 768w\" sizes=\"auto, (max-width: 1200px) 100vw, 1200px\" \/><figcaption class=\"wp-element-caption\"><strong>Fig 2<\/strong>: Red (ripe) jalape\u00f1os <\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">The Rise of Sriracha-Inspired Seasoning and Copycats<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">The pepper shortage gave rise to a host of copycat sriracha sauces, some from leading food manufacturers hoping to capitalize on the shortage of Huy Fong Sriracha. Some of these include Tabasco Sriracha, Sky Valley Sriracha, Texas Pete Cha!, Trader Joe&#8217;s Sriracha, and Yellowbird Sriracha.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">When finding Huy Fong Sriracha on store shelves was virtually impossible, I tried several copycat versions to my disappointment. Most were okay, but none of the copycat alternatives satisfied my taste for the original.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The global love for sriracha has birthed a whole new category of products: sriracha seasonings. These seasonings capture the same bold, spicy flavor of the beloved sauce but in a dry, versatile form.
