Use airtight containers. Spices lose their potency quickly when exposed to oxygen in the air. If you want to transfer spices out of their original packaging, keep them in their original containers or store them in airtight containers.

Avoid moisture. Moisture is the enemy of spices. It can cause them to clump together, lose their flavor, and even grow mold. Always keep your spice jars dry. If you’re using a spoon to scoop out spices, ensure the spoon is dry. In humid environments, it may help to use silica gel packets or moisture-absorbing pouches in your spice jars to maintain dryness.

When buying new spices, place them behind older ones in your spice cabinet. This arrangement requires you to use the older spices first and helps prevent waste. Generally, check your spices every six months to assess their freshness and toss anything that has lost its punch.
