At the heart of any successful product is a unique flavor profile that sets it apart. Special-order ingredients provide an opportunity to do just that. From rare spices to custom packaging, these elements can give your product an edge in a crowded marketplace.

Vanns Spices is well-versed in ingredient sourcing and provides a gateway to the world by leveraging a network of vetted suppliers. Vanns can help you access those elusive components that make your product not just different but memorable.

There’s an allure to using rare ingredients in the food and beverage world. Imagine entering a kitchen where the standard spices and seasonings are replaced with exotic, hard-to-find elements that could turn your product into a standout sensation. (Fig 1)

This is where the magic of special-order ingredients comes into play. Let’s journey into the world of special-order ingredients and discover how they can transform your product while understanding the challenges you might face.

Special-Order Ingredients Challenges

However, with this allure comes challenges. Special-order ingredients often come with higher minimum order quantities, longer lead times, and increased cost. Suppliers generally require you to buy larger volumes to justify their production runs.

For example, suppose you’re using Aleppo Pepper, which comes from the city of Aleppo in northern Syria. You might need to commit to buying more than you initially need. You may face longer lead times due to the ongoing conflict in Syria, which could impact your ability to deliver products consistently. In the case of Aleppo Peppers, you may be forced to use an Aleppo-style pepper from Turkey.

It’s crucial to weigh the pros and cons. On the positive side, these special-order spices can distinguish your product and create niche market appeal. The unique description and story behind a rare ingredient can generate buzz and intrigue among consumers.

On the flip side, there are challenges. Higher minimum order quantities may result in surplus inventory, and longer lead times can delay your product launch. Consistency in flavor profile is another concern. If an ingredient’s availability fluctuates or its quality varies, it could affect the final product.

So, how do you successfully bring a new seasoning blend to market? Start with a recipe that is not just good but exceptional. The uniqueness of your blend should be evident, whether through the use of rare ingredients or a distinctive preparation method.

Consider the availability of your special-order ingredients. Can you source them in quantities that support your scaling needs? Are they cost-effective and consistently available? These questions are crucial because if any aspect of your supply chain falters, it could jeopardize your success.

Natural Flavors and Custom Sourcing

Natural flavorings can offer a way around some of the supply chain problems associated with rare ingredients, allowing you to maintain your product’s unique taste without the associated headaches.

Flavors can be produced in different ways, such as by extraction from plants or from other materials of vegetable, animal, or microbiological origin. Flavors can also be synthesised or obtained through a variety of different processes.

When a natural ingredient (like cocoa) is in short supply, manufacturers can use highly concentrated natural flavors or extracts to achieve the same taste, often at a lower cost and with greater consistency.  The resulting flavor or extract enables manufacturers to reduce the cocoa content, thereby lowering costs without compromising taste.

Vanns Spices recently worked with a food manufacturer to replace soy powder with soy flavor. The resulting soy flavor has the same taste as soy powder, without the soybean allergen. Similar techniques can be used to replace beer, vanilla, coffee, citrus, or pecans that are affected by climate change and supply disruptions, to develop a custom flavor.

Consider the example of coffee beans. Due to tariffs imposed by the U.S. on Brazil and other coffee-producing countries, combined with lower production resulting from climate change, the price of coffee has increased substantially. Using a replacement strategy, manufacturers can utilize natural flavorings and extracts derived from coffee beans as ingredients in baked goods, desserts, and beverages.

The key advantages of natural flavors and replacements include:

  • Cost Stability: Flavor technologies provide price stability as climate change exacerbates supply chain disruption
  • Consistency: Extracts, powders, and flavor systems help standardize taste, ensuring a consistent consumer experience when raw supply shifts or quality varies from season to season
  • Technical Benefits: Flavor alternatives can provide added benefits, such as stability at higher temperatures
  • Flexibility: Flavors give food manufacturers the ability to manage costs without compromising quality, and the ability to experiment with new taste experiences

Special-Order Spices

Sourcing special order materials typically takes 2-4 weeks, but it can be longer for hard-to-find or custom materials. Once the special order material samples arrive, R&D will begin working on a sample of the finished blend, which typically takes 2 weeks (longer for projects involving matching or reverse engineering).

Special-order materials will also add time to manufacturing lead times due to supplier lead times and shipping. Lead times vary by material.

  • Flavors: Add approximately 4-6 weeks to the development timeline. Order lead times are an additional 4-6 weeks.
  • Black garlic: 2–4 week lead time.
  • Specialty chili peppers: Limited and seasonal availability due to harvest times. Order lead times will vary but are approximately 2 weeks.
  • Black cardamom: Very limited availability. Approximately 2-week order lead time.
  • Organic materials: Limited availability, and some materials may not be available in organic form. Order lead times will vary but are approximately 2-4 weeks. Minimum order quantities can be high.
  • Powdered dairy ingredients (butter, cheese, milk, etc.): Order lead times will vary but are approximately 2-4 weeks. These materials can expire and should be ordered as needed for production. Minimum order quantities can be high.
  • Fruit, vegetable, and fruit juice powders: Order lead times will vary but are approximately 2 weeks. These materials can quickly clump and should be ordered as needed for production.
  • Vanilla powder: 1-2 week lead time.

Special-order ingredients can be a game-changer for your product, offering a distinctive edge that sets it apart in a competitive market. However, navigating this space requires careful consideration of supply chain logistics, costs, and consistency. By understanding the challenges and exploring alternatives when necessary, you can harness the power of unique ingredients while mitigating potential risks.

So, whether you are a seasoned chef or a passionate entrepreneur, the journey through the world of special-order ingredients with Vanns is one filled with exciting opportunities and practical challenges; with the right approach, we can work together to turn these challenges into triumphs, creating products that captivate and delight your customers.
